A BRIEF POTATO HISTORY

Potatoes are native to South America.  More than 400 years ago, the Inca people cultivated potatoes in the Andes Mountains.

Potatoes were introduced into Europe as early as 1550;  and were cited in the work Cornica de Peru by Cieza de Leon, published in 1553 in Seville, Spain. They were being grown in England in 1586.

White potatoes became also known as Irish potatoes, since immigrants from Ireland brought them while settling in New Hampshire, United States in 1719. The white potato is likely from a species located on the high plateaus of Peru & Bolivia.

The potato was a significant food crop in Ireland, grown in large amounts, and a key role in Irish cuisine. In 1845 & 1846 a mass die off of the potato crop hit Ireland, causing the death of huge numbers of people; and forcing many others to emigrate to the United States.

POTATO FACTS

The potato plant ranges in size from 1 1/2 to 6 feet in height, and a width of 1 1/2 – 2 feet.

Potatoes are a member of the Nightshade family of plants – and they are not related to sweet potatoes or yams.

The potato tuber is part of the plant stem and grows primarily underground. It isn’t a root.

One plant can often produce 3-6 quality tubers suitable for market.

Potatoes are about 80% water. Starch makes up about 85% of the solids. They are high in Potassium & Vitamin C; and a good source of Iron. A medium-sized potato is about 120 calories.

POTATO RECIPES

Here’s an easy guide for potato prep, cooking; and easy to make, happy caloried potato entrees. (Calorie amounts approximate.)

I really like red potatoes, so those are what I often use.

When can is used as a reference, it’s a standard sized food can (about 3″ circumference & 4″ tall).

Always use caution around heating elements and heated items. Stir items as needed and beware of excessive burning. You may need to adjust cooking times based on your appliances and potato size. Bake, cook & fry responsibly!

Baking a Potato a la Microwave

  1. Poke holes in the tater with a fork about 15-20 times around the tuber.
  2. Put potato on a plate in the microwave (medium-sized spud for about 3:30 – 4:00 minutes). Check for softness (I poke it with a fork in different spots) – if still firm, you might add a little more cooking time.
  3. Remove and cut potato into pieces.

 

BAKED POTATO ENTREES

SOUR SPUD DOGS

Baked Potato + 1 tablespoon Butter + 1/4 cup Sour Cream + 2 Hot Dogs = 650 calories

Bake Potato, then add butter while 2 Hot Dogs are in microwave for about 1 minute. Add sour cream atop tater mass and put dogs to the side.

 

BEEF SPUD ITALIANO

Baked Potato + 1/4 pound Ground Beef + 1/2 cup  Spaghetti Sauce + Cheese Slice = 570 calories

Bake potato. Fry beef. Then to the potato add beef, sauce, and cheese atop; and microwave for about 1 minute.

 

CHILI SPUD

Baked Potato + 1/3 can of Chili + Splash of Ketchup + Cheese Slice = 480 calories

Bake potato, then add chili, ketchup, and cheese atop; and microwave for about 1 minute.

Frying a Potato

  1. Put pan on stove with a medium setting. Add 1 tablespoon butter.
  2. As butter melts, add potato slices (about 1/8 inch thick). Stir a minute.
  3. Add 2 tablespoons Olive Oil. Move and stir slices.
  4. After 2-3 minutes, cover with lid.
  5. Check and stir during, oh perhaps 5-10 minutes, and check potato until softness is happy. Done.

 

FRIED POTATO ENTREES

ONIONS ONIONS & POTATO

Fried Onions + Fried Potato + Side Splash of Ketchup = 460 calories

Prep the fry pan as in (1), then add two sliced onions. Fry for about 3 minutes, then add potato, olive oil, & follow steps (4) & (5). When it’s done, put it on a plate.

 

SAUER KARTOFFEL DOG

Fried Potato + 1/2 can Sauerkraut + Hot Dog + Side Splash of Mustard = 500 calories

Fry Potato then add Sauerkraut. Fry and stir until happy, maybe 3-5 minutes . Microwave hot dog for about 50 seconds. Place it all on a plate.

A novel about Love, Honor, and Tradition. A story about two brothers and a sister who find love in a harsh and unforgiving environment.  The story is mostly about the second born son, who is obliged to fulfill a family tradition, but is also bound to follow a moral and honorable course that takes him on a dangerous and difficult path. The setting of the story is more than 200 years from now,  in what is currently Kansas & Nebraska – of the central plains.
